To celebrate the fall season, I made a batch of pumpkin french toast from a recipe I found on CookingClassy.com.

I will be honest, I wasn’t sure how these would turn out. I wasn’t quite sure how I felt about pumpkin, for one thing, but I knew I like pumpkin pie and french toast, so I decided to try this recipe out!
To begin, you will need:
- 4 eggs
- 2 Tbsp packed light-brown sugar
- 1 tsp vanilla extract
- 3/4 cup milk
- 1/2 cup pumpkin puree
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp ground ginger
- Half a loaf of bread or about 9 slices of bread (day old or slightly stale bread is best for staying together)
- Butter or cooking spray to be used on the griddle
- Optional: whipped cream, syrup
Directions:
- Pre-heat the griddle for 350 degrees.
- Mix the eggs, brown sugar, vanilla, milk, pumpkin, cinnamon, nutmeg, and ginger well in a medium size pan or saucer. I would recommend using a fork or whisk.
- Coat the griddle with a little butter or cooking spray to avoid sticking.
- Take the bread and dip each side into the mixture once or twice, depending on the saturation of your bread. You want the middle to be wet, but you do not want the bread to rip or turn to mush.
- Place the bread on the griddle, and cook each side for about 30 seconds.
- Serve with whipped cream and/or syrup. Enjoy!
Results:
This recipe defied my expectations. I am now in love! The subtle
hints of spice and sweetness were delicious. The addition of mild whipped cream and syrup was perfect, but the best part was the smell. It was glorious. I would highly recommend Pumpkin French Toast this holiday season. It would be wonderful to wake up to on Thanksgiving morning.
