Breakfast, the first meal of the day, and as some may argue, the best meal of the day. Growing up in deep East Texas was a blessing for me, especially when it came to breakfast! No matter who was cooking it, it never failed to put a smile on our faces. My various cousins and I absolutely loved when my great-grandpa would make us biscuits and gravy every morning, along with some bacon if we wanted.
With that being said, I would like to share the biscuits and gravy recipe with you, so you can share with your family!
Ingredients:
Biscuits-
- 2 cups of flour
- 1 tablespoon of baking powder
- ¼ teaspoon of baking soda
- 2 teaspoons of sugar
- 1 teaspoon of salt
- 6 tablespoons of unsalted butter
- ¾ cup of cold buttermilk
Gravy-
- 1 pound of breakfast sausage (this is optional, you do not have to put the sausage in it)
- 3 tablespoons of flour
- 2 cups of warmed milk
- ½ teaspoons of salt
- ¼ teaspoons of black pepper
Process:
Biscuits-
- Preheat oven to 450 degrees
- Combine and whisk the flour, baking powder, baking soda, sugar, and salt
- Once those are well combined, add in the butter and, using a pastry cutter, work the butter into the combined ingredients until you get small, pea sized butter pieces.
- Pour the buttermilk into that mixture and work it in until the dough comes together.
- On top of a floured surface, pat the dough and make it about ½ to 1 inch thick, that measurement is up to you.
- Cut out as many biscuits as possible
- Bake for 15 minutes or until golden brown
Gravy WITH sausage-
- In a sauté pan, add the sausage over medium/high heat.
- Break it apart with a wooden spoon as you go and let it go until it’s cooked through (7 minutes or so)
- Add flour
- Add milk a little at a time until it reaches your desired consistency and it is incorporated
- Let mix thicken for about 5 minutes
- Remove from heat
Gravy WITHOUT sausage-
- Melt butter into a pan
- Add milk until it reaches your desired consistency
- Turn heat setting to low
- Add salt and pepper, if needed
This is where your creativity comes in. By that I mean, serve this dish however your family wishes, may that be gravy across the top of the biscuits, inside the biscuit, or on the side. Enjoy this recipe with your family for breakfast, lunch, or dinner!
