Are you searching for something to cook for dinner that’s cheap, quick, easy, healthy, and kid-friendly? I thought so, I mean at this point, who isn’t?? Luckily enough, this recipe doesn’t take much time at all, which is good for your little one-track-mind babies. Whether you’re feeding little ones or eating like a kid, this recipe will have a smile on everyone’s faces!
Ingredients:
Crust
- 6 ounces of shredded Mozzarella cheese
- 4 eggs
ORRRRR, If you want to make it easier, you can use low carb tortillas and make as many personal size low carb pizza as you would like!
Pizza Topping
- 3 tablespoons of tomato sauce
- 1 teaspoon of dried oregano
- 5 ounces shredded cheese
- 1½ ounces of pepperoni
Process: If you choose to make YOUR OWN crust
- Preheat the oven to 400 degrees
- Crack the eggs into a bowl and add in the shredded cheese. Stir to combine
- Now, spread the cheese and egg mixture onto a baking sheet that is covered with parchment paper (It’s preferred that you use a spatula to spread the mixture, but you can make that choice for yourself). You can either do a circular pizza or fill the baking sheet to make a rectangular pizza.
- Bake for 15 minutes
- Take the pizza out and let it cool for 2 minutes
- Next, put the oven up to 450 degrees
- Spread the tomato sauce on the pizza crust
- Sprinkle the oregano on the top (this is optional)
- Add the cheese on top
- Place the pepperonis
- Add olives, if you so please
- Cook for another 5-10 minutes or until the crust looks golden brown
Process: If you choose to use the LOW CARB TORTILLA
- Preheat the oven to 450 degrees
- Ready a baking sheet with parchment paper on top
- Spread the tomato sauce evenly across each low carb tortilla (this is the part the kids usually LOVE!)
- Sprinkle cheese on each low carb tortilla
- Place the pepperonis and/or any other topping you would like on top of each tortilla
- Place in the oven for 10-15 minutes or until the edges are golden brown
- Take out and let cool
