A Little PEP(peroni) in Your Step: Low Carb Pizza

Are you searching for something to cook for dinner that’s cheap, quick, easy, healthy, and kid-friendly? I thought so, I mean at this point, who isn’t?? Luckily enough, this recipe doesn’t take much time at all, which is good for your little one-track-mind babies. Whether you’re feeding little ones or eating like a kid, this recipe will have a smile on everyone’s faces! 

Ingredients: 

Crust 

  • 6 ounces of shredded Mozzarella cheese 
  • 4 eggs  

ORRRRR, If you want to make it easier, you can use low carb tortillas and make as many personal size low carb pizza as you would like!  

Pizza Topping 

  • 3 tablespoons of tomato sauce 
  • 1 teaspoon of dried oregano 
  • 5 ounces shredded cheese 
  • 1½ ounces of pepperoni 

Process: If you choose to make YOUR OWN crust 

  1. Preheat the oven to 400 degrees 
  1. Crack the eggs into a bowl and add in the shredded cheese. Stir to combine 
  1. Now, spread the cheese and egg mixture onto a baking sheet that is covered with parchment paper (It’s preferred that you use a spatula to spread the mixture, but you can make that choice for yourself). You can either do a circular pizza or fill the baking sheet to make a rectangular pizza.  
  1. Bake for 15 minutes 
  1. Take the pizza out and let it cool for 2 minutes 
  1. Next, put the oven up to 450 degrees 
  1. Spread the tomato sauce on the pizza crust 
  1. Sprinkle the oregano on the top (this is optional) 
  1. Add the cheese on top 
  1. Place the pepperonis 
  1. Add olives, if you so please 
  1. Cook for another 5-10 minutes or until the crust looks golden brown 

Process: If you choose to use the LOW CARB TORTILLA 

  1. Preheat the oven to 450 degrees 
  1. Ready a baking sheet with parchment paper on top 
  1. Spread the tomato sauce evenly across each low carb tortilla (this is the part the kids usually LOVE!) 
  1. Sprinkle cheese on each low carb tortilla 
  1. Place the pepperonis and/or any other topping you would like on top of each tortilla 
  1. Place in the oven for 10-15 minutes or until the edges are golden brown 
  1. Take out and let cool 

Now you and your kids can enjoy a meal that they got to make themselves! I don’t know about you, but everything seems to taste better when you worked hard to make it yourself. Who doesn’t love a good life lesson along with a healthy pizza?
