This can easily be made the night before, where he can easily grab it and go the next morning. If you are like Kevin’s friend, you might want to try this recipe, too. Kevin’s version comes from “Redbook,” Jan. 2014, edition.

Healthy Chicken and Pita Pockets

Ingredients for Healthy Chicken and Pita Pockets.

Ingredients:

1 ( 10 ounces) frozen broccoli florets, steamed
4 pita pockets, halved
½ pomegranate, seeded
1 pound chicken breast tenders, seasoned with lemon pepper, baked
1 cup non-fat plain yogurt
1 tablespoon olive oil
1 teaspoon sugar
ÂĽ teaspoon salt
Juice and zest of ½ lemon

Directions:

Whisk together yogurt, olive oil, sugar, salt, and lemon juice and zest. Spread desired amount inside each pita. Add chicken tenders and broccoli. Top with pomegranate seeds. Serve!
